enough, I love it so much, but my mother never thought to prepare it also on
normal days. Since shirt time, I have started myself to make on regular basis.
Kids (an husband) love it, it is easy to prepare, with ingredients that
normally are always in an Italian pantry/fridge. If you follow the original
recipe you can add also ham cubes, or salami (or whichever you have in the fridge).<span style="mso-spacerun: yes;"> </span>I have made the vegetarian version without
meat, but we love the ham version as well.</span></div>

di spaghetti, il piatto tipico nel napoletano per le scampagnate, le giornate
in spiaggia e I picnic! Io e mia sorella la adoravamo, ma stranamente mia mamma
non la preparava mai al di fuori di queste occasioni fuori porta. Da qualche
tempo ho iniziato a prepararla regolarmente, I bambini (e il marito) la
adorano. Di solito si aggiungono cubetti di prosciutto, pezzetti di salame o
anche rondelline di wurstel (o qualsiasi tipo di affettato avete in frigo).
Questa volta ho preprarato una versione vegetariana con solo formaggio, ma ci
piace tantissimo anche quella con il prosciutto.</span></div>

gli spaghetti in abbondante acqua salata e scolarli al dente.</span></div>

capiente ciotola sbattere le uova con il parmigiano, sale e pepe e aggiungere
gli spaghetti. Di solito la frittata si cuoce in una padella larga, ma io
preferisco cuocerla in forno a 180gradi per circa 40 minuti, dopo aver
versato il pangrattato sulla superficie (cosi’ fa la crosticina). Per queste
dosi di solito uso una teglia da 24cm di diametro, se pero’ preferite una
frittata piu’ sottile potete usarne anche una da 26cm.</span></div>

Ancora pesto, oh yes! Dato che riscuote sempre successo, e che avevo un sacchetto di rucola troppo amara per l'insalata, ho pensato di farne un pesto. L'amaro della rucola si e' sposato perfettamente con il gusto piu' delicato delle mandorle<br />
Ingredienti<br />
150gr rucola<br />
2 cucchiai di parmigiano<br />
3 cucchiai di mandorle (meglio se spellate)<br />
sale e olio di oliva<br />
Preparazione<br />
Frullare rucola con mandorle e parmigiano, aggiungere sale secondo gusto e olio di oliva fino a raggiungere una consistenza bella cremosa.<br />
Non potrebbe essere piu' facile, ma su un piatto di tortelloni (e tanto parmigiano) e' stato davvero un successo<br />

Blend
all ingredients together, add olive oil until a smooth cream, and enjoy

Thanks to <a href="http://tulimami.blogspot.com/" target="_blank">tulimami</a> and to <a href="http://vivereapiedinudi.blogspot.nl/" target="_blank">Lallabel</a> I got the possibility to participate to this nice swap. Everyone made something related to a mushroom, and sent to his/her swap-mate. My swap-mate was Tiziana. I got from her a nice bookmark, which I have immediately used for my recipe books. I had to fight, because my son found it wonderful "mom, these are the Super Mario mushrooms!!!" and he wanted to have it. Maybe we will share it... :-)<br />
I sent her a decoration for her kitchen, which I have crocheted using a red ribbon, and a white one which has been recicled from an old shirt.<br />

Le partecipanti dovevano realizzare qualcosa a tema fungoso e spedirlo alla rispettiva ocmpagna di swap. Io ho ricevuto da Tiziana questo carinissimo segnalibro, che ho subito usato nei miei libri di ricette. Ho dovuto contenderlo con il mio bimbo, che ha subito detto "mamma, sono i funghetti di Super Mario!!!" e voleva averlo per i suoi libri. Magari faremo a turno... :-)<br />

It's getting cold and dark, the leaves get the wonderful red, yellow and orange colors, time to bake an apple cake. This is my recipe<br />
Ingredients<br />
3 apples (I used goldrenettes)<br />
1 tbsp cinnamon<br />
200gr sugar (if you have, use brown sugar beet)<br />
300gr flour<br />
1 pgk baking powder<br />
100gr butter (please, use butter, not margarine or other stuff, you will taste the difference)<br />
3 eggs <br />
Directions<br />
Peel the apples and cut them in thin slices. Mix them with the cinnamon and 2 tbsp sugar, and let the in a bowl. Stirr the eggs with the sugar, keeps mixing until foamy. Add slowly the butter, the flour and the baking powder until a smooth dough. Mix now with the apple slices (and the kind of syrup you should have gotten after mixing with sugar and cinnamon). Butter and flour a round pan (I used a 24cm diameter), and spoon gently the gough into the pan. Bake (oven 180<span style="font-family: inherit;">°C - </span><span style="font-family: inherit;"><span style="font-family: inherit;">350°F -</span></span> degree) until a toothpick inserted in the middle comes out clean (but slightly
wet), 40 to 45 minutes.<br />

Non so in Italia, ma qui in Olanda ha iniziato a far freddo, piove e le giornate dono diventate (gia' troppo per i miei gusti) corte. Le foglie degli alberi si tingono dei meravigliosi toni del rosso, giallo e arancio dell'autunno. E' il momento giusto per una torta di mele. Questa la mia ricetta<br />
<br />
Ingredienti<br />
3 mele<br />
200gr di zucchero (meglio se di canna)<br />
300gr di farina<br />
100 gr di burro (burro, oh yeah, niente margarina o alternative pseudodietetiche, credetemi che la differenza si sente)<br />
1 bustina di lievito<br />
3 uova<br />
1 cucchiaio di cannella <br />
Preparazione<br />
Sbucciare le mele e tagliarle a fettine sottili. Mescolare con la cannella e due cucchiai di zuchhero e lasciare riposare in una terrina mentre preparate l'impasto della torta.<br />
Montare le uova con lo zucchero fino ad ottenere un composto spumoso, aggiungere delicatamente il burro a pezzetti, la farina e il lievito. Per ultimo aggiungere le fettine di mele (e il sughetto che si sara' formato). Imburrare e infarinare una teglia da 24cm, versare il composto e cuocere in forno (180<span style="font-family: inherit;">°C) per 40-45 minuti. Fate la prova stecchino per verificare la cottura</span><br />

2 tablespoons hazelnuts<br />
olive oil (extra vergine)<br />

Directions<br />
It can not be easier, just mix all ingredients (for the olive oil, I just use how much it is nevessary to have a good consistency in the sauce, here I have used about 50 ml because the spinaches are quite watery) in the food processor, and you are ready!<br />
It is full of vitamins and really tastefull, yesterday I have used to season the fresh pasta I have made with the pasta maker of the kenwood cooking chef.<br />

Ieri pero' ne ho fatto una versione a crudo che si e' rivelata ancora piu' buona.<br />
<i>Ingredienti</i><br />
300gr di spinaci freschi<br />
1 spicchio d'aglio<br />
2 cucchiai abbondanti di nocciole<br />
sale<br />
olio extra vergine di oliva<br />
<i>Preparazione</i><br />
Nel mixer mettere le nocciole, il sale e gli spinaci ben scolati e strizzati.
Frullate fino ad ottenere una crema e poi aggiungete l'olio di oliva
fino ad ottenere la consistenza desiderata.<br />

Crespelle, the italian name for crepes. My mother used to make them with ham and cream filling and a bechamelle sauce on them, wonderfull!<br />
This is a vegetarian version, I have taken inspiration from a ravioli filling I have seen <a href="http://straightedgefam.blogspot.it/" target="_blank">in this blog</a><br />
The crespelle were delicious, however, nex time I will use more spice in the filling, since the combination potato and zucchini make it a bit too plain taste<br />
<br />
Ingredients (serve 4)<br />
For the crespelle <br />
350ml milk<br />
200ml water<br />
2 eggs<br />
250gr flour<br />
For the filling<br />
2 zucchini, chopped<br />
4 potatoes, chopped<br />
a bit of milk or water<br />
oregano<br />
For the sauce<br />
500gr chopped tomatoes<br />
1 onion<br />
salt, pepper, oregano<br />
<br />
olive oil <br />
<br />
rasped parmigiano cheese<br />
<br />
Directions<br />
Whisk the eggs with milk and water, add slowly the flour, keep stirring in order to obtain a smooth dough.<br />
Cook all the crespelle in a small pan (I used a 20cm pan) with a bit of oil.<br />
For the filling, cook the potatoes for about 15 minutes, add the zucchini the last 5 minutes. Drain, and blend with a bit of milk.<br />
Spread a bit of filling on each crespella, roll it and put in a casserole dish.<br />
Make the sauce, warm the onion in the olive oil. Add the tomatoes, salt pepper and oregano and bring to boil. let cook for about 30 minutes.<br />
Pur the sauce on the crespelle, add the parmigiano cheese (how much you prefer!) and bake in the oven (180 degree) for about 20 minutes<br />

This is a recept I often make during summer, I have taken inspiration from tabbouleh, but since I do not like cous cous I use rice<br />

Ingredients (serve 4)<br />
300gr (brown and white) rice<br />
4 tomatoes, chopped<br />
250gr cooked chickpeas<br />
1 cucumber, chopped<br />
2 tbsp olive oil<br />
juice of 1 lemon<br />
1 tree onion, chopped<br />
some mint leaves, chopped<br />
some olives <br />
salt <br />

Directions<br />
Boild the rice, and just mix with all ingredients :-) Make the dressing by mixing the olive oil with the lemon juice and the salt.<br />
Easy, fresh, delicious with turkish bread and hummus <br />

<b>Ingredienti </b><br />
<i>Per la base</i><br />
350 di farina<br />
1 pizzico di sale<br />
1/2 bustina di lievito per pizze e torte salate<br />
acqua q.b.<br />
<i>Per il ripieno</i><br />
200gr di philadelphia<br />
4 uova<br />
100ml di latte<br />
300gr di pomodori<br />
125gr di mozzarella<br />
origano e sale<br />

<b>Preparazione</b><br />
Mescolare gli ingredienti per la base fino ad ottenere un composto omogeneo e compatto, che stenderete con il mattarello. Coprire il fondo e i bordi di una teglia (io ne ho usata una rettangolare da 20x30cm circa).<br />
Per il ripieno, sbattere le uova con il latte e la philadelphia. Aggiungere il sale e l'origano. Tagliare i pomodori a fette e la mozzarella a pezzetti. Aggiungere la mozzarella al composto di uova. Versare il composto nella teglia, completare con le fette di pomodoro e cuocere in forno caldo a 200<span style="font-family: inherit;">°C</span> per circa 30-40 minuti<br />

<b>Directions</b><br />
<span style="font-family: inherit;">Knead together flour, salt, baking powder and water to a smooth dough. Roll out the dough in a baking form (I used a rectangular one, with dimensions 20cm * 30cm). Cut tomatoes in slices and mozzarella in small cubes. For the filling mix </span><span style="font-family: inherit;">together the cream cheese, eggs, salt, oregano and mozzarella. Pour the cheese mixture in the baking form and add the tomato slices. Bake for 30-40 minutes in the preheated oven on 200°C.</span><br />

La zuppa di piselli, unica in questi giorni cosi' freddi, adatta anche a venire congelata, pronta per quando tornate a casa dal lavoro e siete stache, infreddolite e affamate...<br />
<u><i>Ingredienti</i></u> per 6 persone<br />
150 di piselli secchi<br />
1 carota<br />
1 cipolla<br />
1 porro<br />
1 dado da brodo di carne, o meglio ancora un pezzo di carne da brodo (circa 300gr)<br />
3 wurstel grandi di maiale affumicati<br />
olio<br />
sale<br />
pepe<br />
prezzemolo<br />
3 foglie di allora<br />
1 patata grande o un pezzo di sedano rapa (circa 200gr) <br />
<br />
<u><i>Preparazione</i></u><br />
Tagliare tutte le verdure a cubetti. Portare ad ebollizione due litri d'acqua in una capiente pentola. Versare i piselli (non hanno bisogno di ammollo), l'alloro e la carne da brodo (o il dado) e far cuocere per un'ora. A questo punto aggiungere le altre verdure e far cuocere per altri 30 minuti. Frullare con il minipimer. Aggiungere i wurstel a rondelle, il prezzemolo e se necessario aggiustare di sale e pepe. <br />
Da mangiare rigorosamente bollente (io ci aggiungo anche dei crostini), un piatto unico gustoso e nutriente.<br />

Chop all vegetables. Bring 2 lt water to boiling. Add the split peas, the bay laurel and the meat for stock. Let boil for 60 minutes. Add all the vegetables and let boil for other 30 minutes. Blend with immersion blender. Add the chopped sausages, parsley and salt and pepper if necessary.
