Meatless monday: summer rice salad

BAck to work, back to blog (my holiday was not as long as this blog break, however..)
This is a recept I often make during summer, I have taken inspiration from tabbouleh, but since I do not like cous cous  I use rice

Ingredients (serve 4)
300gr (brown and white) rice
4 tomatoes, chopped
250gr cooked chickpeas
1 cucumber, chopped
2 tbsp olive oil
juice of 1 lemon
1 tree onion, chopped
some mint leaves, chopped
some olives
salt

Directions
Boild the rice, and just mix with all ingredients :-) Make the dressing by mixing the olive oil with the lemon juice and the salt.
Easy, fresh, delicious with turkish bread and hummus
